It's described in ?plotmath. You can use

 text(x=.05,y=.5,substitute(paste(rho, rho2), list(rho2=rho)))

or maybe without that paste() something like:

 text(x=.05, y=.5, substitute(rho == rho2, list(rho2=rho)))
